Grilled Chicken with Peanut Sauce

After what has seemed like a long winter I am excited about getting the grill fired up! This recipe for Grilled Chicken with Peanut Sauce is perfect for outside grilling.

There is something about Thai chicken satay that I love. I think a large part of it is the peanut dipping sauce that goes along with it. When I was thinking about posting a recipe for this I thought that I should try to combine the two, grilling the chicken and serving the peanut sauce on the side. I am always up for making meals easier!

I worked on a few marinades and came up with a winner! There is no reason to serve a dipping sauce on the side, the chicken is so flavorful you do not need it.

As most food bloggers do, I will make a recipe a number of times before posting it. Sometimes I need to tweak the recipe but most times I need to retake photos of the dish I am making.

I was not happy with the last set of photos I took for this Grilled Chicken with Peanut Sauce. I waited for a sunny day (better light for the photos;-) and got everything ready. My camera was on the tripod, the chicken had marinated overnight, I had my plates and backdrops all ready to go and then I started the grill. Or rather I attempted to start the grill.

I could not start it. So, since I had everything else ready, I came up with a plan B. I took out my beloved cast-iron skillet, browned the chicken in it and then placed the chicken and skillet in the oven to finish cooking. But you know what? It was every bit as good as on the grill!

Now to figure out what is wrong with our grill! I am, however, confident I will be able to fix my beloved Weber grill.

History of satay meat skewers:

I found a great web site, Grapes and Grains that has a very detailed post on the history of satay meat skewers. Satay originated on Java, an island in Indonesia. It soon spread to other Southeast Asian countries. This has become a national dish in Indonesia.

It is basically seasoned and skewered grilled meat served with a sauce. It can be served with a number of different sauces but the most popular is made up of soy sauce and peanut butter, usually called satay sauce.

Grilled Chicken with Peanut Sauce

I love chicken satay with Thai peanut sauce. I also love an easy recipe. Here I have taken a few shortcuts and the result is a very tasty, very easy grilled chicken, marinated in a great peanut sauce.

Ingredients

  • 2 lbs. chicken, thighs, breasts or legs (I prefer boneless, skinless chicken thighs but feel free to use whatever your family likes best)
  • 4 Tbsp canola oil
  • 4 Tbsp soy sauce
  • 4 Tbsp creamy peanut butter
  • 3 Tbsp fresh lime juice
  • 1 Tbsp honey
  • 1/2 tsp hot sauce

Instructions

  • Mix all ingredients until well blended. You may want to use a whisk or blender (the peanut butter is somewhat hard to blend).

  • Cover the chicken with the marinade. Turn the chicken over to make sure it is well coated. Cover and refrigerate overnight.
  • Grill until a meat theramometer registers 165 degrees. You may also roast in a 375-degree oven. 
    Be sure to wash the dish the chicken was marinating in before returning the cooked chicken to the dish. 

Notes

The calorie count for this recipe is high, but since a portion of the marinade is thrown out, the actual count should be adjusted.
