I love chicken satay with Thai peanut sauce. I also love an easy recipe. Here I have taken a few shortcuts and the result is a very tasty, very easy grilled chicken, marinated in a great peanut sauce.

Ingredients
2lbs.chicken, thighs, breasts or legs(I prefer boneless, skinless chicken thighs but feel free to use whatever your family likes best)
4Tbspcanola oil
4Tbspsoy sauce
4Tbspcreamy peanut butter
3Tbspfresh lime juice
1Tbsphoney
1/2tsphot sauce
Instructions
Mix all ingredients until well blended. You may want to use a whisk or blender (the peanut butter is somewhat hard to blend).
Cover the chicken with the marinade. Turn the chicken over to make sure it is well coated. Cover and refrigerate overnight.
Grill until a meat theramometer registers 165 degrees. You may also roast in a 375-degree oven. Be sure to wash the dish the chicken was marinating in before returning the cooked chicken to the dish.
Notes
The calorie count for this recipe is high, but since a portion of the marinade is thrown out, the actual count should be adjusted.
