This wonderful salad dressing is an old classic. It gets the green color from the parsley. The Greek yogurt lightens it up and the taste is fantastic!

Ingredients
2/3cupGreek yogurt
1/4cuplow-fat mayonnaise
2Tbsp.finely chopped green onion
2Tbsp.finely chopped fresh parsley
1/2tsp.freshly ground black pepper
1clovegarlic, minced
Instructions
Combine all ingredients in container of electric blender. Cover, blend until smooth, scraping down sides as necessary. Refrigerate at least one hour before serving.
Notes
The blender I have in my kitchen is the Oster 16-speed with a glass jar. When looking for a new blender stay away from any with plastic jars, they can absorb food odors and I do not believe they are as sanitary as the glass ones.
