Green Goddess Salad Dressing
Green Goddess Salad Dressing is a throw-back recipe that I remember enjoying when I was growing up.
My mom loved to cook and she loved saving recipes. In her cookbook collection is one that is titled “I’m Writing My Own Cookbook!”. In this cookbook, she would either type, write out or tape favorite recipes that she found in magazines or had collected from friends. I absolutely love looking through this cookbook and trying recipes I know my mom also made.
This special cookbook is now in my collection ;-). I remember when Green Goddess Dressing was all the rage. It is something that should be shared so others can enjoy it as much as I do. As an added bonus, it is surprisingly low in calories!
History of Green Goddess Salad Dressing:
According to the Association of Dressings and Sauces, (I bet you never even knew there was such an association), Green Goddess Salad Dressing dates back to the 1920s.
I was surprised to learn that its name did not come from the color of the dressing, which is a wonderful pale green.
The chef at San Francisco’s Palace Hotel wanted to honor an actor who was staying at the hotel. The actor was George Arliss and the play he was in was “The Green Goddess”. Apparently both the play and this salad dressing were big hits!
The salad dressing originally included which anchovies, scallions, parsley, tarragon, mayonnaise, tarragon vinegar, and chives. I am sure that was delicious but I am happy this one does not call for anchovies and I appreciate the addition of Greek yogurt.
