Asparagus Appetizer
This Asparagus Appetizer is a tasty bite-size appetizer that can be made ahead of time and kept in the freezer. It is perfect for any entertaining.
My friend Jan brought them to Bunco one night and I knew then that I had to share the recipe with you! The original recipe calls for 3/4 of a pound of butter! Yikes! They were delicious but I cut down the butter to ¾ of a cup. Still tasty and so much better for my cholesterol level :-).
They are simple to make. The recipe calls for thin-sliced sandwich bread. My grocery store always carries Pepperidge Farm Very Thin White Bread which is perfect for this Asparagus Appetizer recipe. It is not a problem if you can not find thin-sliced bread. Use whatever you buy and since you will be using a rolling pin to roll out the bread it will be fine. They may be a little thicker but the taste will still be delicious!
There is only a subtle taste of blue cheese in the filling. If you are not a fan of blue cheese feel free to substitute another cheese. In fact, you may want to substitute both the cream cheese and blue cheese and use a flavored cream cheese type spread such as one of the Alloutette that is available. Asparagus Appetizer
Ingredients
- 20 fresh asparagus spears (thin stalks are better for this recipe)
- 20 slices thin sandwich white bread
- 8 oz. cream cheese, softened
- 4 oz blue cheese, crumbled
- 1 egg, beaten
- salt and pepper to taste
- 3/4 cup butter
Instructions
- Trim crusts from bread, and flatten slightly with a rolling pin.In a small bowl, combine blue cheese and cream cheese together with the egg until well blended and creamy. Season with salt and pepper. Go easy on the salt, the blue cheese can be pretty salty.Spread a thin layer of cheese mixture over each slice of bread. Roll one asparagus spear inside each, and fasten with a toothpick if necessary.
- Melt butter in a small skillet. Roll each asparagus wrap in butter to coat. Place on a baking sheet small enough to fit into your freezer and freeze one hour, or until butter hardens and wraps are somewhat firm. Remove from freezer, discard toothpicks and cut each wrap in half. Freeze until ready to use.
- To serve, preheat oven to 350 degrees. Arrange frozen asparagus wraps on an ungreased baking sheet. Bake in the oven for 25 minutes, or until lightly browned. Check occasionally and turn if necessary for even browning. Enjoy!
