This Asparagus Appetizer is a tasty bite-size appetizer that can be made ahead of time and kept in the freezer. It is perfect for any entertaining.

My friend Jan brought them to Bunco one night and I knew then that I had to share the recipe with you! The original recipe calls for 3/4 of a pound of butter! Yikes! They were delicious but I cut down the butter to ¾ of a cup. Still tasty and so much better for my cholesterol level :-).

They are simple to make. The recipe calls for thin-sliced sandwich bread. My grocery store always carries Pepperidge Farm Very Thin White Bread which is perfect for this Asparagus Appetizer recipe. It is not a problem if you can not find thin-sliced bread. Use whatever you buy and since you will be using a rolling pin to roll out the bread it will be fine. They may be a little thicker but the taste will still be delicious!

There is only a subtle taste of blue cheese in the filling. If you are not a fan of blue cheese feel free to substitute another cheese. In fact, you may want to substitute both the cream cheese and blue cheese and use a flavored cream cheese type spread such as one of the Alloutette that is available. If you do please let me know what you think!

Spread a thin layer of cheese mixture over each slice of bread. Roll one asparagus spear inside each, and fasten with a toothpick if necessary.
Ingredients for the asparagus appetizer including a loaf of thin slice white bread, 2 sticks of butter, fresh asparagus, 4 oz. container of crumbled blue cheese, an egg and 8 oz. of cream cheese, with the teal EatReadCruise notebook peaking in the left bottom corner.
  • Melt butter in a small skillet. Roll each asparagus wrap in butter to coat.
