If you are looking for a GREAT homemade salad dressing this is the post to read.

When buying you first home you hope you will get good neighbors. Sometime you get great neighbors, sometimes not so great. When we purchased our first home we landed into a fantastic block and had fantastic neighbors. Our next door neighbors were okay, but a little odd.

Circumstances had them move and a young couple with a baby moved in. They were the best! We became very close and shared recipes. My favorite from this exchange is for Carolyn’s Creation Salad Dressing. My neighbor got it from her mother and it is one. great. recipe!

It calls for a grated onion. Have you ever tried to grate an onion? While it is great in the recipe, boy does it release the juice in the onion. And with this comes burning eyes. I use a mini-chopper to chop the onion so fine it is just like grating it. Only no more burning eyes! A link to the mini-chopper I use in in the note section at the end of my recipe.

I found a good article on Taste of Home that tried several different ways to cut onions without crying. Read this article to see which worked and which did not work.

Another tip is not to use shredded parmesan cheese. In order to have this dressing mix properly you need to add finely grated cheese.

Carolyn’s Creation Salad Dressing

The first time I tasted this salad dressing was over 34 years ago. It was one of the best homemade salad dressings I had ever tasted! Our next door neighbor shared the recipe, handed down to her from her mother. I am now happy to pass it along to you.

Ingredients

  • 1 cup oil (Canola, corn or extra virgin olive oil)
  • 1/2 cup sugar
  • 1/2 cup vinegar
  • 1/2 cup ketchup
  • 1/2 cup finely grated Parmesan cheese
  • 1 tsp. salt
  • 1/2 tsp. freshly ground pepper
  • 1 small onion, finely grated (see recipe notes)

Instructions

  • Beat, bottle & refrigerate!
    Ketchup, vinegar, Olive oil, onion and fresh parmesan cheese on a wood board

Notes

Grating the onion take the most time in this recipe. You can certainly use a hand grater or my favorite, this mini-chopper
