Polly’s House Salad Dressing
Polly’s House Salad Dressing – yum! My favorite cookbook is one that belonged to my mom. It is one of those I’m Writing My Own Cookbooks, where you can fill it with your own recipes.
Most of hers are typewritten. She did include the source on most of them. This one comes from Bon Appetit, February 1985.
I try many different recipes, both because I love cooking and also for inclusion in my blog. Some are good but not good enough to make again. Others are so good that not only will I make them over and over again but are actually blog-worthy. This recipe for Polly’s House Salad Dressing falls into the latter category. I have made this over and over again and here it is on my blog.
I did try to verify the recipe online but other than buying an old copy, which I do not need, I have been unsuccessful. So Polly, whoever you are, thank you for this somewhat unusual but ever so tasty salad dressing recipe! We love it! It is a creamy, sweet-tart salad dressing.
Another great salad dressing that is more like a French dressing is Carolyn’s Creation Salad Dressing.
Cashew Trivia:
I was initially surprised at the inclusion of cashews in this recipe. Now I love cashews but never would have thought to add them to the actual salad dressing. For fun, I thought I would include a few bits of trivia about this great tasting nut.
- Cashews are actually a seed, not a nut.
- An ounce of cashews is 150 calories but will keep you satiated longer than a processed-carb snack of equal calories.
- Cashews are a good source of healthy fats and protein, with 5 grams of protein per one-ounce serving and 9 grams of unsaturated fats.
Polly’s House Salad dressing
Ingredients
- 1/4 cup olive oil (original recipe calls for vegetable oil, feel free to substitute)
- 1/4 cup cashews
- 3 Tbsp. honey
- 1 Tbsp. fresh lemon juice
- 2 tsp. white wine vinegar (original recipe calls for distilled white vinegar, feel free to substitute)
- 1.5 tsp. dried dillweed
- 3/4 tsp. light soy sauce (I used low-sodium)
- 2 cloves garlic, peeled
Instructions
- Mix all ingredients in a blender until very smooth. Store in a covered jar in the refrigerator. Shake well before using. This is great over any type of salad!
